Sichuan Pepper CO2

Sichuan pepper is a spice from the Sichuan cuisine of China’s southwestern Sichuan and Yunnan provinces and the city of Chongqing, where it has been cultivated for more than 20 years. Despite the name, Zanthoxylum schinifolium, it is not related to black pepper or chili peppers (which belong to the Piperaceae Family). Instead, it belongs to the Rutaceae family, the citrus family, which explains its zesty olfactive notes. The Sichuan pepper is mainly used in essential oils, spices, food additives, and Chinese Traditional Medicine. Harvested from June to September or October, the farmers need to dry it under the sun for one day before sieving and filtering the collection to remove the twigs. The pepper berry and the leaves are finally brought to the local markets to be sold.
